Building off the successful example of the Alvarado Street Bakery, ICA works to start new and convert existing food manufacturers, especially specialty bakeries, breweries, and frozen prepared food companies. Despite some limitations of food-based businesses, food manufacturing holds great promise for supporting middle skill workers. Currently, industry consolidation has placed downward pressure on wages, and too often profitable factories close up shop to pursue slightly higher margins in low wage markets. By focusing on building firms that can operate in protected markets, forging relationships with high road retailers like consumer food coops and other natural food retailers, we will set the foundation of a food sector that can challenge this status quo. An additional area that holds great promise for worker ownership is the development of brewpubs that leverage the high margins that come with brewing beer to support high quality restaurant work.
